Anniversary cake this year, for no reason other than I wanted to make it, was a baklava cheesecake of my own creation. I need to do some tweaking, I think, but everyone agreed it came out perfect. Next time I might bake the filo for a short time before putting in the nuts and cheesecake filling and such. Other than that, though, om nom nom. I looked at recipes online, but none of them captured what I was going for. So I used my typical base recipe and excluded the sugar and put in powdered honey instead. It. Was. Perfect.

Will I make it again? Of course I will. Possibly for Thanksgiving. Possibly for Christmas. It was like making baklava only a million times simpler. Part of me wants to try making it in a sheet pan as baklava cheesecake squares. If -that- works well, I might package them and sell them at Roses next year.

Yay for baking experimentation!!
